An Overview of Fast-Freezing Technology

By submerging the product into an alcohol compound, the speed of freezing has become faster by 20 times compared to the pervious method. Therefore, the freezing point (0 to -5℃)is passed in a very short amount of time without the chance of the tissues being damaged. In this liquid-basis fast freezing technology, the grain of the tissues become finer, which results in minimized dripping when thawing.

 

Characteristics of Fast-Frozen Products

  • Guaranteed safety and sanitary processing of the food product due to a faster freezing method by 20 times compared to the previous freezing method.
  • The crystallized tissue of the cells become finer, resulting in less dripping effects when thawing naturally or using liquid.
  • Possible to maintain a near-fresh state of the product in terms of taste, appearance, and texture after thawing.
